Summer is here and with it comes fresh fruit and vegetables, often right out of your garden! Here are some healthy summer recipes that are refreshing, nutritious, and easy to prepare:
Watermelon and Feta Salad
Ingredients:
1 cup crumbled feta cheese
1/4 cup fresh mint leaves, chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
Instructions:
In a large bowl, combine watermelon, feta cheese and mint leaves.
Drizzle with olive oil and balsamic vinegar.
Toss gently to combine.
Season with salt and pepper to taste.
Serve chilled.
Grilled Chicken and Veggie Skewers
Ingredients:
2 boneless, skinless chicken breasts, cut into cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 zucchini, sliced
1 red onion, cut into chunks
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Wooden or metal skewers
Instructions:
Preheat grill to medium-high heat.
In a bowl, combine olive oil, garlic powder, paprika, salt and pepper.
Add chicken and veggies to the bowl and toss to coat evenly.
Thread chicken and veggies onto skewers.
Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and veggies are tender.
Serve with a side of tzatziki sauce or your favorite dipping sauce.
Quinoa and Black Bean Salad
Ingredients:
1 cup quinoa
2 cups water
1 can (15 oz) black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 cup corn kernels (fresh or frozen)
1 avocado, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, chopped
Juice of 2 limes
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes or until water is absorbed.
Remove from heat and let quinoa cool.
In a large bowl, combine cooked quinoa, black beans, cherry tomatoes, corn, avocado, red onion and cilantro.
In a small bowl, whisk together lime juice, olive oil, salt and pepper.
Pour dressing over salad and toss to combine.
Serve chilled or at room temperature.
Mango Avocado Salsa
Ingredients:
2 ripe mangoes, peeled and diced
1 avocado, diced
1/2 red bell pepper, diced
1/4 red onion, finely chopped
1 jalapeño, seeded and finely chopped
Juice of 1 lime
2 tablespoons fresh cilantro, chopped
Salt and pepper to taste
Instructions:
In a medium bowl, combine mangoes, avocado, red bell pepper, red onion and jalapeño.
Drizzle with lime juice and add cilantro.
Gently toss to combine.
Season with salt and pepper to taste.
Serve with tortilla chips or as a topping for grilled fish or chicken.
Berry Yogurt Parfait
Ingredients:
2 cups Greek yogurt
1 cup mixed berries (strawberries, blueberries, raspberries)
1/4 cup granola
2 tablespoons honey
Fresh mint leaves for garnish
Instructions:
In serving glasses, layer Greek yogurt, mixed berries and granola.
Drizzle honey over the top.
Repeat layers if desired.
Garnish with fresh mint leaves.
Serve immediately.
